Spicy Enchilada Bean Dip

Ingredients

Scale
  • 2 tbsp oil
  • 1 small onion – diced
  • 2 Anaheim peppers or poblano peppers – diced
  • 2 tsp each: salt, ground cumin, oregano, smoked paprika
  • 1 cup cream cheese
  • 1/4 cup sour cream
  • 1/4 cup Herdez salsa verde
  • 1/3 cup enchilada sauce
  • 1/2 cup pinto beans
  • 1/2 cup black beans
  • 1 cup Colby jack cheese
  • 1 cup pepper jack cheese
  • Tortilla chips to serve with

Additional Garnishes

  • Cilantro
  • Scallions
  • Tomatoes
  • Fresh or pickled jalapeños

Instructions

  1. Preheat oven to 350F. In a cast iron skillet over med high, add oil and cook the onions and peppers for 2 mins.
  2. Add all of the seasonings followed by cream cheese and sour cream. Mix until cream cheese is fully incorporated.
  3. Add the salsa verde, enchilada sauce and beans. Mix until everything is nice and well incorporated. Turn off the heat and sprinkle on both cheeses.
  4. Bake in the oven at 350F for 15 mins or until cheese is nice and melted.
  5. Garnish with cilantro, scallions and additional sauces if needed, Enjoy!
