If you need a good weeknight or a good date night in recipe, look no further! This roasted garlic broccoli Alfredo is literally mouth watering!

Homemade Alfredo that takes little to no time to make is so good you’ll never want the jar stuff again! I did roast the garlic the day before since I already had the oven on when I was baking stuff but you can always throw it in the air fryer for 20 mins.

Feel free to swap out the AP flour with GF flour when making the roux.

Roasted Garlic Broccoli Alfredo

Ingredients

Scale
  • 3 tbsp butter
  • 1/2 white onion finely diced
  • 1 head of garlic
  • 3 tbsp flour
  • 1/2 tbsp Italian seasoning
  • 1 tsp salt and pepper each
  • 4 cups milk
  • ¼ cup freshly grated parmesan cheese
  • 2 cups broccoli florets
  • 1/2 box pasta of choice

Instructions

  1. Boil pasta accordingly to the instructions on the back of the package. Sliced the top of the garlic bulb and drizzle with olive oil and salt, wrap in foil and bake at 400°F for 20 mins or until garlic is brown and roasted.
  2. In a large sauce pan, heat up the butter and add the onions, cook for 2 mins. Next squeeze out the roasted garlic from the bulb and add to the pan.
  3. Sprinkle in the flour and stir everything until the raw flour is completely cooked down. Add in the seasonings, milk and Parmesan Cheese. Stir everything together until you have a lump free sauce, add the broccoli, stir and cover the pan with a lid. Turn the heat down to the low and let sauce simmer for 4-6 mins.
  4. Add the pasta to the sauce, grate more Parmesan Cheese on top and enjoy!

Notes

  • You can roast the garlic in the air fryer at 400F for 15-20 mins.
  • I like to microwave the broccoli florets with a little water for 1 min before adding them into the pan, it’s a quicker way to cook them without loosing flavor.
