This Biscoff S’mores Cookies recipe is a delicious take on two classics: a chocolate chip cookie and s’mores. With a soft, buttery chocolate chip cookie rolling in Biscoff crumbs and topped off with a marshmallow, this easy cookie recipe is perfect for all ages and occasions.

If you’ve never had Biscoff cookies before, it’s time to fix that! They are these incredible, buttery, smooth cookies that have a hint of gingerbread flavor. They are made using hints of spices like cinnamon, caramel, rich brown sugar, and more.

Biscoff is quite popular in Europe and can often be found as an airplane snack on select U.S. domestic flights, but they’re definitely a lesser-known snack in the food world.

When I went to London 20 years ago, I discovered the magic of these biscuits and my life has truly been better since then. (They even make Biscoff cookie butter, which is equally to die for!)

I got a small package on the plane and they’ve become one of my all-time favorite cookies.

Dipping Biscoff in coffee is the best way to enjoy them by themselves – or you could make my Biscoff S’mores Cookies recipe for some additional deliciousness. 

This holiday season, I wanted to incorporate on my favorite cookies into an exciting recipe that both kids and adults will eat up in no time. The key to a cookie like that is to use interesting flavors and textures, which is why Biscoff is the perfect cookie to use for this fun holiday cookie recipe.

And what could be more fun and nostalgic than a s’more?

This Biscoff S’mores Cookie has a little bit of everything in the best way possible: crunchy on the edges, soft in the middle, and ooey gooey on top with melted marshmallows!

These are the perfect feel-good sweet treat for literally everyone because it caters to different textures and flavors, making them approachable and yummy for every single person. Kids will love the soft center and the marshmallows, adults will love the contrasting crunchy cookie exterior and the cakey interior – it’s fun all around.

Tips & Tricks for the Perfect Biscoff S’mores Cookies

I found that the key to the perfect cookie is to cut your marshmallows in half (especially if you are using the big ones), and place the marshmallow in the center of the cookie halfway through the baking process.

Rather than adding your marshmallow on top right from the beginning, doing this helps you achieve the perfect melted marshmallow without the burnt edges.

Additionally, know that the dough will be a little wet when working with it before baking. Don’t worry though! That’s completely normal. You can simply wet your hands with water or oil and roll out the dough to keep the water from sticking.

Lastly, serving these cookies warm (with or without ice cream!) is definitely delicious, but it can also be messy. For mess-free serving and eating, make these cookies the day before and store them in an airtight container. Then, keep them at room temperature before serving!

Biscoff S’mores Cookies

Ingredients

  • 1/2 cup crushed Biscoff Cookies
  • 2 tbsp sugar
  • 2 tbsp melted butter
  • 1& 1/2 cups all purpose flour
  • 1/2 cup melted butter
  • 1 cup sugar
  • 1/4 cup brown sugar
  • 1 egg
  • 2 tsp vanilla extract
  • 2 tbsp milk
  • 1 cup mini chocolate chips
  • 1520 marshmallows (regular size marshmallows should be cut down the middle.)

Instructions

  1. Preheat oven to 350F and line the baking sheet with parchment paper.
  2. In a small bowl, combine the crushed biscoff cookies and 2 tbsp melted butter and sugar.
  3. In a large bowl or stand mixer, combine butter, sugar and brown sugar. Mix until the mixture has a pale yellow color and is fluffy.
  4. Next add the egg, milk and vanilla extract. Mix on low speed for 2 mins.
  5. Next add the flour and mix on low speed until everything is well combined.
  6. Add the chocolate chips and fold them into the dough.
  7. Form small balls and roll them in the biscoff cookie crumbs, place them on the baking sheet for 10-13 mins (until the cookies are slightly puffed)
  8. Take the cookies out of the oven and place the marshmallow in the middle of the cookie, place pan back in the oven for 45 seconds until the marshmallows are all melted and brown.
  9. Take the cookies out, cool for 10 mins and enjoy!

Hey S,
I’d say I’m a pretty experienced home baker and I’m stumped by the 45 seconds it takes to melt the marshmallow s in your recipie – I’m going on 8 extra minutes and I still don’t even have color on mine….

Do you think the ingredients in the US vs London are that significantly different?

Sorry I misread your story- you went to London , didn’t make these in London….oh man I need a coffee break 😉

First and foremost thank you for making the cookies, but I will say ingredients such a flour and marshmallows are a bit different in London vs US because of certain Ingredients. The best way to melt the marshmallows in a jiffy is maybe to put cookies under the broiler for 30 seconds and the marshmallows will melt a lot faster.
