Steps:

  1. Prep the Paneer: Marinate the paneer cubes in the BBQ sauce. Ensure each piece is well coated. Let it sit for about 30 minutes.
  2. Grill the Paneer: Heat a non-stick pan or grill. Place the marinated paneer cubes and grill until they have a slight char on the edges.
  3. Preheat the Oven: While the paneer is grilling, preheat your oven to 375°F (190°C).
  4. Assemble the Pizza: Place the English muffin halves on a baking tray. Spread a generous amount of Serrano Jalapeño sauce on each. Sprinkle some shredded mozzarella, followed by BBQ paneer cubes and red onion slices.
  5. Bake: Slide the tray into the oven and bake for about 10 minutes or until the cheese melts and turns slightly golden.

BBQ Paneer Muffin Bites

Ingredients

  • 1 English muffins (halved)
  • 1/4 cup – Paneer cubes
  • 3 tbsp BBQ sauce of your choice
  • Serrano Jalapeño sauce or ranch
  • Mozzarella cheese (shredded)
  • Fresh cilantro (chopped, for garnish)
  • Red onion slices
  • Salt and pepper to taste
  • 1 tsp each – garlic + onion powder
  • 1 tsp cayenne pepper

Instructions

  1. In a skillet, drizzle some oil and add the paneer cubes along with the seasoning and bbq sauce. Cook for 3-4 mins on med heat.
  2. Add the paneer mixture on top of the English muffins, along with sliced onions and cheese.
  3. Air fry or bake at 350F for 12 mins or until cheese is nice and bubbly.
  4. Garnish with cilantro, scallions and top it off with my jalapeño sauce or ranch. Enjoy!
