Grinder Bean Salad

Ingredients

  • 115oz can of navy beans (drain & rinsed)
  • 1 red bell pepper – sliced
  • 2 Persian cucumbers – diced
  • 1 small red onion – diced finely
  • 10 cheery tomatoes cut in half
  • 35 banana or Cascabella peppers – diced
  • Half a bunch of parsley – finely minced
  • 1/4 cup olive oil
  • 3 tbsp red wine vinegar
  • 2 tsp each: oregano, garlic powder & salt
  • Juice of half a lemon

Instructions

  1. Into a large bowl, mix the oil, red wine vinegar, lemon juice and seasonings together.
  2. Add all the chopped veggies, parsley and beans into the bowl. Mix together until everything is well incorporated.
  3. Store in an airtight container in the fridge, will last up to a week!
