Ingredients

- 1 – 15oz can of navy beans (drain & rinsed)
- 1 red bell pepper – sliced
- 2 Persian cucumbers – diced
- 1 small red onion – diced finely
- 10 cheery tomatoes cut in half
- 3–5 banana or Cascabella peppers – diced
- Half a bunch of parsley – finely minced
- 1/4 cup olive oil
- 3 tbsp red wine vinegar
- 2 tsp each: oregano, garlic powder & salt
- Juice of half a lemon
Instructions
- Into a large bowl, mix the oil, red wine vinegar, lemon juice and seasonings together.
- Add all the chopped veggies, parsley and beans into the bowl. Mix together until everything is well incorporated.
- Store in an airtight container in the fridge, will last up to a week!
