Grilled Jalapeno Elote

Summer is right around the corner and if you love Mexican Elotes, then you will love this twist on traditional Elotes but with a kick of heat!

When I lived in San Diego, I use to eat Elotes almost every week! I loved it on boiled/steam corn and grilled, you can do either or. I did brush the corn with a little bit of avocado oil before placing them on the grill.

For the creamy spicy spread, I mixed mayonnaise a little bit of sour cream (that’s the secret ingredient) and blended it with a grilled jalapeño and some lime zest + juice and a little bit of tajin seasoning. If you want extra heat you can add grilled Serrano peppers instead of he jalapeño, but just make sure which every pepper you use, to check for the heat before hand. I usually cut my a tiny slit in to my pepper and smell to see if it has a kick to it, the jalapeños I used for this recipe were super spicy! I was coughing when I grilled it which is why I only used half of a jalapeño.

As important as the spread is for the Elote, the real star of the show is the tangy yet addicting cojita cheese you smothered the corn in. You can find this cheese in a round block at any grocery store in the refrigerated section. I like to crumble the cheese at home and let it sit on top of a paper towel to remove the extra moisture.

Grilled Jalapeno Elote

Ingredients

  • 5 Corn on the cob
  • 12 Jalapeños
  • 1 lime + zest and juice
  • Tajin Seasoning
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup finely chopped cilantro
  • 10 oz Cotija Cheese – finely crumbled

Instructions

  1. Grill the corn and jalapeños, set it aside.
  2. Into a small blender add: Mayonnaise, sour cream, juice of lime and zest, 2 tsp tajin seasoning and roughly chopped jalapeños. Blend until smooth.
  3. Spread the mixture on each piece of corn and sprinkle on the cojita cheese.
  4. Garnish with a squeeze of lime on top, tajin and chopped cilantro. Enjoy!

Notes

  • You can replace the mayonnaise with any of your favorite vegan brand.
  • Feel free to swap the sour cream for any lactose free or diary free brand you like.
