FYI: This recipe only takes 30 mins and can be prepped in advanced. I love to marinate my paneer beforehand or even couple days before (Sunday meal prep). Along with the paneer marinate I usually make all my chutney’s as well. Now you don’t need a ton of chutneys but you will need the basics, cilantro and red garlic chutney!
The filling can be made with a variety of things such as paneer (Indian cheese), extra firm tofu, potatoes or even chicken! The marinate stays the same for any of those substitutions mentioned above!
Now since I don’t have time to make fresh roti’s for this recipe I use my favorite short cut, Kawan frozen paratha! These can be found at any Indian grocery store in the freezer section.
I did add sliced green bell peppers and sliced white onions to this recipe, but feel free to add more or less of any veggies you have on hand! Sometimes I make a quick cabbage, carrot and bell pepper stir fry to add into my kati rolls! Extra veggies never hurt a soul but also it feels so nice to clean up the fridge and not have anything go to waste!

12oz paneer (I only used half of the block) cut into small cubes
1/4 cup chili sauce (I used Chings brand)
1/2 tbsp oil (I used homemade chili oil)
2 tbsp soy sauce
1 tsp turmeric
2 tsp garam masala
1 tsp ground coriander
2 tsp dried fenugreek
salt to taste
Halal Guys Green Chutney
½cupyogurtregular or greek
1cupmayo
2tbspwater
1tbspvinegar distilled is fine
2tspsugar
1tsplemon juice
½tspsalt and pepper
1/4 cup cilantro
6–10 mint leaves
3 cloves garlic
half a inch numb of ginger
1/2 tsp ground cumin
Instructions

Add all ingredients into a blender and blend until everything is well combined and you have a smooth consistency.
Chili Paneer Kati Rolls
In a bowl, combine all the spices along with the chili oil + chili sauce + soy sauce with the paneer and veggies. Mix well to ensure that the everything is coated with the spices and sauces. Set side.
Heat a large skillet over medium-high heat and add a tablespoon of oil. Once the oil is hot, add the mixture and cook until it is golden brown on all sides, about 5-7 minutes and set aside.
Heat the parathas according to the package instructions or cook them on a skillet until they are warm and pliable.
To assemble the kati rolls, place a paratha on a clean surface and spread a generous amount of chutney over the top. Add a few spoonfuls of the chili paneer mixture and green chutney.
Roll up the paratha tightly and secure it with a toothpick or wrap it in foil to keep it together. Serve the chili paneer kati rolls hot with extra chutney on the side for dipping. Enjoy!

Air Frying Instructions: After step 1, add the paneer to the air fryer basket and cook at 380F for 7-10 mins. Or until the paneer is nice and brown, you can also add the veggies into the air fryer as well but make sure not to over crowd. It might be best to do 2 batches in the air fryer.
