Instructions
Grill the corn and jalapeños *see notes for an air fryer hack
In a bowl, combine the cream cheese, sour cream and mayonnaise. Add the garlic, lime juice and zest. Mix everything until you have a lump free base.
Add all the seasonings and grilled chopped corn and jalapeños into the dip along with scallions and cilantro.
Transfer into a baking dish and place in the fridge for 15-30 mins.
Garnish with crumbles of Cojita cheese, cilantro and scallions! Enjoy with some tortilla chips.
Notes
If you don’t want to fire up the grill for the jalapeños and corn, simply place them in the air fryer at 400F for 7-12 mins. Spray them lightly with cooking oil.
