Spicy Elote Dip

Ingredients

  • 1 cup mayonnaise
  • 1/3 cup cream cheese
  • 1/4 cup sour cream
  • 1/2 juice of lime + zest
  • 2 cloves of garlic – grated
  • 1 cups of grilled corn
  • 2 jalapeños – grilled
  • 1/4 cup scallions – finely chopped
  • 1/4 cup cilantro – finely chopped
  • Cojita cheese – crumbled
  • 2 tsp each of the following seasonings: taco seasoning  oregano adobe seasoning  smoked paprika

Instructions

  1. Grill the corn and jalapeños *see notes for an air fryer hack
  2. In a bowl, combine the cream cheese, sour cream and mayonnaise. Add the garlic, lime juice and zest. Mix everything until you have a lump free base.
  3. Add all the seasonings and grilled chopped corn and jalapeños into the dip along with scallions and cilantro.
  4. Transfer into a baking dish and place in the fridge for 15-30 mins.
  5. Garnish with crumbles of Cojita cheese, cilantro and scallions! Enjoy with some tortilla chips.

Notes

  • If you don’t want to fire up the grill for the jalapeños and corn, simply place them in the air fryer at 400F for 7-12 mins. Spray them lightly with cooking oil.
