Vaghareli Khichdi

Description

This quick, healthy South Asian dish is a one-pot mix of rice, lentils, and spices that takes just minutes to prepare in an Instant Pot.




Ingredients

Scale
  • 3 tbsp oil
  •  1 bay leaf
  •  1 tsp cumin seeds
  •  2 dried red chilies
  •  1 tbsp peanuts
  •  ½ cinnamon stick
  •  1 onion chopped
  •  ⅓ cup Green pigeon peas or lilva
  •  ¼ cup toor dal or split pigeon peas
  •  1&½ cup rice washed
  •  1 tbsp garlic paste grated
  •  ½ tbsp ginger paste grated
  •  2 green chilies minced
  •  1 tsp Turmeric
  •  2 tsp garam masala
  •  2 tsp thana jeeru (ground coriander)
  •  2 tsp red chili powder
  •  2 tsp salt (to taste)
  •  2&½ cups water
  •  ¼ cup cilantro for garnish

Masala Chaas Ingredients:

  • 1 cup yogurt 
  • 2 cups water
  • 1/2 tbsp ghee 
  • 2 green chilies 
  • 1 garlic clove – cut into small pieces 
  • 1/2 tsp black mustard seeds 
  • 4 curry leaves 
  • 1 tsp chaat masala 
  • 2 tsp salt or to taste 
  • 2 tbsp cilantro 

Instructions

  1. Heat up the instant pot, put on sauté mode for 5 mins. Once it heats up it will say hot on the screen.
  2. Add the oil, followed by all the whole spices, bay leaf, cumin seeds, dried red chilies, peanuts and cinnamon stick, cook for 1 min.
  3. Next add the onions, and cook for 1-2 mins, followed by adding in the Green pigeon peas, toor dal and rice.
  4.  Add all your spices and seasonings, stir everything until it’s well combined. Add the water, out the lid on the Instant pot and close the valve. Press cancel on the screen and press pressure cook and arrange the cook time for 7 mins.
  5. Once it’s cooked, you’ll see the valve go down (natural release) and you can garnish with cilantro and enjoy with chaas.

Masala Chaas:

  1. In a bowl, mix the yogurt, water, salt and chaat masala, whisk everything together until you have a lump free mixture. 
  2. In a small pot, heat up the ghee on medium heat. Add the mustard seeds, garlic, green chilies and curry leaves. Cook for 1 min and turn off the heat.
  3. Next add Chaas into the pot and mix in the cilantro. Stir and serve over the khichdi. Enjoy!
