Spicy Mac & Cheese bites

Ingredients

  • 23 cups leftover mac and cheese
  • 2 eggs
  • 1 tbsp milk
  • 2 cups panko bread crumbs
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • 4 cups cooking oil

Instructions

  1. In a deep plate or large bowl, mix panko bread crumbs, onion+garlic powder and smoked paprika. Mix until everything is well incorporated and set aside. Whisk eggs with milk and set aside.
  2. Using a cookie scoop or a large spoon; spoon out about 2-3 tablespoons of the mixture at a time and shape into 1- 2 inch balls, compressing slightly.
  3. Dip balls in egg mixture, then coat in pankoI like to double coat mine for an extra crispy outside.
  4. Heat oil in a deep pot and fry a couple of mac and cheese balls at a time (make sure not to over crowd the pot) for 3 to 4 minutes per batch, until golden.
  5. Drain on a paper towel-lined plate and serve hot with marinara. Enjoy!

Notes

  • You can freeze these after you have dipped them in breadcrumbs and use them whoever you need them.
  • Place in air fryer at 390F for 5-7 mins until golden brown. I recommend spraying the Mac and cheese bites with a little bit of cooking spray to get that golden brown taste!
