Ingredients

- 1 cup mayonnaise
- 1/3 cup cream cheese
- 1/4 cup sour cream
- 1/2 juice of lime + zest
- 2 cloves of garlic – grated
- 1 cups of grilled corn
- 2 jalapeños – grilled
- 1/4 cup scallions – finely chopped
- 1/4 cup cilantro – finely chopped
- Cojita cheese – crumbled
- 2 tsp each of the following seasonings: taco seasoning oregano adobe seasoning smoked paprika
Instructions
- Grill the corn and jalapeños *see notes for an air fryer hack
- In a bowl, combine the cream cheese, sour cream and mayonnaise. Add the garlic, lime juice and zest. Mix everything until you have a lump free base.
- Add all the seasonings and grilled chopped corn and jalapeños into the dip along with scallions and cilantro.
- Transfer into a baking dish and place in the fridge for 15-30 mins.
- Garnish with crumbles of Cojita cheese, cilantro and scallions! Enjoy with some tortilla chips.
Notes
- If you don’t want to fire up the grill for the jalapeños and corn, simply place them in the air fryer at 400F for 7-12 mins. Spray them lightly with cooking oil.
