Pimento Spaghetti

Ingredients

  • 1/2 box of spaghetti
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 small onion – finely diced
  • 2 tbsp pimento peppers * see notes
  • 2 tbsp Calabrian pepper paste
  • 2 tbsp tomato paste
  • 1 tsp Worcestershire sauce
  • 2 tsp each: garlic + onion powder, smoked paprika, oregano
  • 2 cups veggie broth
  • 1&1/2 cup heavy whipping cream
  • 1/2 cup grated sharp cheddar cheese
  • chives or scallions for garnish

Instructions

  1. Cook spaghetti accordingly to package instructions.
  2. In a large sauce pan over medium heat, start by cooking the onions with butter and olive oil. Cook for 2-3 minutes until onions are bit translucent.
  3. Add the pimento pepper, Calabrian chili, tomato paste and Worcestershire sauce mix everything together and add all the spices.
  4. Add in the veggie broth and heavy whipping cream, bring to a low simmer and turn heat off and sprinkle in the cheese. Add the cooked spaghetti and mix everything until all the spaghetti is covered in that cheesy sauce, garnish with chives and serve! Enjoy!
