Are you tired of the same old noodle dishes? Well, how about trying a fusion of two cuisines with this delicious recipe for drunken noodles, a combination of Thai and Italian flavors. This dish is perfect for those who love a little spice, a little creaminess, and a lot of flavor.
To start, gather your ingredients. You’ll need some Italian sausage, red and green bell peppers, onions, garlic, noodles, parmesan cheese, flat-leaf parsley, and some Italian seasonings like smoked paprika, oregano, and more.
Begin by cooking the Italian sausage in a large skillet over medium-high heat until browned and cooked through. Next, add in the chopped onions and peppers and sauté until they’re softened and lightly browned. Then, toss in some minced garlic and continue cooking for another minute until fragrant. Next add the calabrian chili paste, tomato paste and soy sauce will be the biggest game changer for this recipe. These 3 elements really help to bring depth, spiciness and slight tang to the recipe without adding fish sauce or even adding green chilies!
Now it’s time to add in the seasoning. Sprinkle in some smoked paprika, oregano, and basil, and stir everything together. Then, pour in some soy sauce to deglaze the pan, followed by some white wine and let it cook for a few minutes until the liquid has reduced by half.
In the meantime, cook your noodles according to the package instructions until al dente. Once done, drain them and set them aside.
Back to the skillet, stir in some heavy cream or veggie broth if you prefer a lighter option, and let it simmer for a few more minutes until the sauce thickens slightly. Then, add in your cooked noodles and toss everything together until the noodles are coated in the creamy sauce.
Finally, sprinkle on some freshly grated parmesan cheese and chopped flat-leaf parsley to add some extra flavor and color to the dish.
This recipe is perfect for those times when you need a little comfort food, but also want to switch things up a bit. The combination of spicy Italian sausage, sweet bell peppers, and creamy sauce is sure to hit the spot. Plus, with the addition of Thai flavors like smoked paprika and soy sauce you’ll be transported to a new culinary world.
Vegetarian or Vegan Option
If you’re feeling a little rough after a night of indulging, this dish can also be modified to be a little healthier. Simply skip the white wine and replace it with veggie broth to cut down on the alcohol. And if you’re vegetarian or vegan, you can easily substitute the sausage for some plant-based protein like tofu or tempeh.
Overall, this drunken noodles recipe is a perfect blend of comforting and adventurous flavors. So the next time you’re looking for a new dish to try, give this one a shot. Your taste buds will thank you.

Notes
If you want this to be an alcoholic free recipe, replace the white wine with veggie or chicken broth.
I used dry white wine for cooking, it can be found in the aisle as salad dressing, oils and vinegar.
You can also use any dry white wine of choice that you have at home.
