Try This Healthy Twist on Taco Bell’s Fiesta Potatoes: Ground Tofu Edition!

Are you craving the flavors of Taco Bell’s Fiesta Potatoes but aiming for a healthier option? Look no further! I’ve got you covered with a nutritious twist that replaces the traditional seasoned ground tofu.

This recipe is a mixture of Taco Bell’s Fiesta Potatoes and a ground “beef” taco. I love using tofu in replace of any animal protein for this recipe because the texture from the roasted potatoes really blend so well with the ground tofu and not to mention it’s very filling.

The key to achieving really good “moist” ground tofu is to remove all the liquid from the packaging and also let the tofu sit in a stainer for 10 mins before cooking it. The reason why I let the tofu sit in the stainer rather than squeezing out all the liquid is because this helps to keep the tofu more soft and moist. Removing all the liquid will just result into dry almost hard rock tofu crumbles.

Trust me this method has been tried and tested a few times and I noticed removing all the liquid also makes the very hard to work with when cooking. You won’t need much oil when you cook the tofu with a little bit of an its liquid but you will need some seasonings.

Seasoning the tofu is key, please don’t skip this step or any of the spices because this is what helps to give the tofu color, taste and texture. I love adding a little bit of coconut amino’s or soy sauce for not only color but to give it a depth of flavor that tofu lacks. I use this same seasoning when I make my ground chicken and it’s honestly a game changer so please don’t skip it.

Fiesta Potato Grain Tofu Bowl

Ingredients

Roasted Potatoes 

  • 2 sweet potatoes – diced 
  • 1 russet potato – diced 
  • 23 tbsp avocado oil 
  • 1 tbsp cajun seasoning 
  • 1/2 tbsp taco seasoning or Mateo’s hot chipotle taco seasoning 

Ground Tofu 

  • 12 oz extra firm tofu – drain all the water 
  • 1 tbsp soy sauce 
  • 1 tsp each: garlic, onion, smoked paprika, ground cumin, salt, oregano 

Instructions

Roasted Potatoes 

  1. Preheat oven to 380F, add the diced potatoes into a baking tray along with the seasonings and drizzle on the oil. Give everything a good mix and roast for 20 mins. 

Ground Tofu 

  1. Heat up oil in a hot skillet, carefully add the crumbled tofu into the pan. Add in the soy sauce and cook on med/high heat for 2 mins. Next add in the all the seasonings and cook for additional 3-4 mins until the edges of the tofu are nice and crispy. 

Assembly 

  1. Add the roasted potatoes into a bowl, layer with ground tofu and any choice of toppings you desire. I love to add crispy iceberg lettuce, tomatoes, onions, shredded cheese, guacamole and sour cream!
