With that being said, I wanted to share this quick recipe for my version of fried rice and hope y’all enjoy it as much we do. You can use day old rice which is preferred or you can use which ever form of grains you like. I have made this a million times using brown rice as well and it comes out BOMB!

Crispy Garlic Fried Rice

Ingredients

Scale
  • 2 cups left over or day old rice 
  • 1 small onion diced
  • 1 carrot diced 
  • ¼ cup frozen peas
  • 2 tbsp chili oil 
  • 2 tbsp butter
  • 3 tsp sambal
  • 3 tsp soy sauce
  • 2 tsp hoisin sauce
  • 3 cloves garlic minced or grated
  • ½ tsp salt + black pepper
  • 2 tsp toasted sesame oil

Scallion Eggs

  • 2 eggs
  • 2 tbsp milk 
  • salt + pepper to taste 
  • 1/4 cup – chopped scallions

Instructions

  1. In a small pan, cook your eggs with a little bit of butter, Once the eggs are cooked, set them aside on a plate and let’s make the fried rice! 
  2. Heat the chili oil in a large pan or wok over medium-high heat.
  3. Add the garlic, onion, peas, and carrot to the pan and sauté for 3-4 minutes, until the veggies are tender.
  4. Add the cooked rice to the pan and stir well to combine with the veggies.
  5. Pour all the sauces and seasonings over the rice and stir well to coat.
  6. Create a well in the center of the rice and add the butter, minced garlic and 1 tsp additional sauce soy. Once the butter melts with the garlic and soy sauce, mix everything into the rice and turn off the heat. 
  7. Add cooked eggs into the rice, add scallions and serve! Enjoy! 

Notes

  • For a healthier version, mix 1 packet of seeds of change brown rice and 1/3 cup of cooked quinoa. 
  • Feel free to use any veggies you have on hand, mushrooms, broccoli, green beans etc.
  • For added protein, chicken and shrimp go very well with this dish.
