These Crispy Chipotle Cheddar Mashed Potato Patties are possibly the easiest, most delicious leftover meal hack you’ve ever had. A mix of delicious, savory ingredients fried up into a crispy crunchy patty, perfect for dipping with your favorite sauce.
Raise your hand if you think it’s impossible to go wrong with any potato dish (I have both hands up!). No matter how you prepare potatoes, everyone loves it: fried, baked, mashed, doesn’t matter.
I personally love any Thanksgiving recipe that involves potatoes. In fact, I used to always be in charge of making the mashed potato every year when I got married. It may be the most basic potato dish in history, but my husband’s family loved my version.
My secret is to use fresh herbs and cook them in the butter to incorporate that rich, infused flavor into the potatoes while they are nice and hot. Add some additional tabs of butter along with the cold heavy whipping cream and you get the best mashed potato ever.
However, if you know anything about mashed potatoes, you know it’s basically no good the next day. With leftover mashed potato not being as exciting as say, leftover Spicy Buffalo Mac and Cheese, (which you can make Spicy Mac & Cheese Bites with), I had to figure out what to do to avoid tossing perfectly good food in the trash.
I would always repurpose leftover mashed potatoes into fritters or crispy potato patties using whatever other ingredients I had on hand. That’s how I came up with these Crispy Chipotle Cheddar Mashed Potato Patties.
Actually, all you really have to do is add flour! You don’t need to add eggs, and you can even substitute the all-purpose flour in my recipe with gluten-free flour or oat flour.
Not only does this make the best brunch and/or hangover dish, but everyone is always looking forward to eating it! It’s especially helpful if you’re hosting family during the holidays.
Mashed potatoes can be a great, quick addition to any meal spread. Then, you can reimagine it the next day to keep your guests on their toes and not have to serve them exact leftovers.
Long story short, don’t let anyone tell you that you can’t impress people with leftovers.

In a bowl mix the scallions, cheese, adobe sauce and creamed corn together along with the mashed potatoes. Next add in the flour and mix until everything is well combined.
Form small patties, repeat until you no longer have any potato mixture left.
In a skillet, heat up some oil and butter and place the potato patties onto the skillet and cook on med/high heat for 2-3 mins on each side until golden brown. Serve with sour cream, ranch or any sauce of choice.
