Chicken Cheesesteak

Ingredients

  • 2 tbsp oil
  • 1 lb ground chicken
  • 4 sub rolls
  • 12 slices of provolone or American cheese
  • 1 medium onion – sliced
  • 1 green bell pepper – sliced
  • 610 mushrooms – sliced
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 tsp oregano
  • 2 tsp smoked paprika
  • 1 tsp crushed red pepper
  • 1 tbsp soy sauce
  • salt & pepper to taste
  • Mayonnaise

Instructions

  1. In a small bowl, mix all the dry spices together.
  2. In a cast iron skillet, heat oil on medium heat. Add the onions, peppers and mushrooms, cook for 4-6 mins. Add half the seasoning mix to the veggies and give it a good mix. Transfer the cooked veggies to a plate.
  3. Add an oil to the pan, followed by the ground chicken. Season the chicken with the remaining of the seasoning and add the soy sauce. Break up the chicken and give everything a good mix.
  4. Add the veggies to the chicken and divide the chicken and vegetable mixture into 4 separate piles in the pan (preferably in a shape resembling the bread you are using.) Cover each pile with cheese, and let the cheese melt over the tops of the piles.
  5. Cut the sub rolls in half and place in the boiler for toast. Once the subs are toasty, spread a good layer of mayo and scoop one of the chicken and vegetable piles into a warm sausage roll. Repeat with remaining sausage roll. Serve hot!
