Chicken & Broccoli in Garlic Sauce

Ingredients

Chicken Marinade

  • 2 chicken breast cut into 1 ½-inch pieces
  • 1 tbsp soy sauce
  • 1 tbsp toasted sesame oil
  • 1 tbsp cornstarch
  • 3 tsp sriracha
  • 1 tsp rice wine vinegar
  • 1 tsp baking soda
  • ½ tsp black pepper

Brown Garlic Sauce

  • ½ cup chicken or veggie broth
  •  cup hoisin sauce
  • 2 tbsp brown sugar or honey
  • 1 tbsp minced garlic 5-7 garlic cloves
  • ½ tbsp rice wine vinegar
  • 1 tbsp sriracha
  • 1 tsp toasted sesame oil
  • 1 tsp crushed red pepper
  • 2 tsp cornstarch

Broccoli Stir Fry

  • 4 cups broccoli florets cut into bite size pieces
  • 1 tbsp oil
  • 2 tsp ginger grated
  • ¼ cup water

Instructions

Chicken Marinade

  1. Add all the ingredients into a bowl and whisk it together. Next add the chicken and coat everything together. Set aside at room temp.

Brown Garlic Sauce

  1. In a bowl combine everything together and set aside.

Broccoli Stir Fry

  1. In a large skillet or wok, heat up the oil and add the broccoli and ginger, cook for 2-3 mins on high heat and add the water and cover with a lid, let the broccoli steam and cook through. Once broccoli is cooked, transfer into a bowl and set aside.
  2. In the same skillet or wok over med-high heat, add some oil. Once the oil is hot add in the chicken and cook until golden brown for 2-3 mins.
  3. Next add in the sauce and birng to a low simmer. Once the sauce comes to a simmer add in the broccoli and give everything a good mix.
  4. Serve immediately with white rice and enjoy!

Notes

  • You can replace chicken breast with thighs as well.
  • Replace chicken with tofu but just omit the baking soda.
  • Baking soda really helps to tenderize the chicken, its a step you don’t want to skip.
  • You can marinated the chicken the night before and chop the broccoli as well to save you time.
  • Serve with white rice, fried rice, brown rice or even quinoa.
