Take a bit into this spicy, cheesy scrambled egg Sandwich and it will have you wanting more! I’ve been making these eggs every since I met my husband, he loves a good breakfast sandwich and I love anything spicy, so this pretty much has been our go to for weekend breakfast or brunch!

Cheesy Mexican Eggs

Description

Take a bit into this spicy, cheesy scrambled egg Sandwich and it will have you wanting more! I’ve been making these eggs every since I met my husband, he loves a good breakfast sandwich and I love anything spicy, so this pretty much has been our go to for weekend breakfast or brunch!


Ingredients

Scale
  • 4 eggs you can also do eggwhites
  • 2 tbsp milk
  • 2 tbsp butter
  • ½ tomato chopped
  • ½ onion chopped
  • 1 jalapeno minced
  • ½ tsp paprika
  • ½ tbsp taco seasoning
  • ½ tsp garlic powder
  • 1 tsp cayenne pepper
  • salt and pepper to taste

Assembly

  • 2 slices pepperjack cheese any cheese of choice even shredded works fine
  • 2 buns or toast you can even use a wrap
  • cilantro for garnish
  • grilled jalapenos optional *see notes

Spicy Mayo

  •  cup mayonnaise
  • 2 tbsp sirracha hot sauce°

Instructions

  1. In a bowl combine eggs, milk, salt & pepper.
  2. In a pan, heat the butter up and add chopped onions and jalapenos. Cook for 3 min on med high heat. Add the remaining seasonings and give everything a good stir.
  3. Add the tomatoes and sitr. Next add the eggs into the pan and lower heat and put a lid on it. Once the eggs start to cook, sprinkle in the cheese and cilantro. Turn heat off and set aside.
  4. Toast the buns or bread and spread some spicy mayo on it, next add some eggs and top it off with more cheese if you like or the bread! Enjoy!

Notes

  • If you want an egg-less version you can use Just eat egg, it can be found at whole foods.
  • Add +or+ less spices depending on your taste buds.
  • I threw a jalapeño in my air fryer at 390F for 6 mins to get a grilled jalapeño that I ended up added on top of my eggs.
