Carrot Halwa Ice Cream Cookies

Description

These easy-to-make gajar halwa ice cream sandwiches are a South Asian twist on a beloved classic and a great fusion dessert recipe for Diwali. The gajar (carrot) halwa cookie exterior brings an authentic Indian flavor to the American ice cream sandwich.


Ingredients

  • 1 cup butter melted
  • 1 cup brown sugar
  • 1 tsp vanilla extract
  • 1 egg
  •  cup gajar halwa
  • 1 cups flour

Filling

  • Favorite ice cream of choice
  • 1 cup shredded coconut
  • ¼ cup roughly chopped pistachios

Instructions

  • Preheat oven to 375°F and line a large baking sheet with parchment paper or silicone baking mat.
  • In a bowl, add the melted butter, brown sugar and egg and vanilla extract. Mix everything together and add the gajar halwa and flour.
  • Mix everything together until you have a cookie dough. Scoop 1&1/2 tablespoon size balls of dough and place onto the parchment lined baking sheet. Bake for 12-15 mins until cookies are fully cooked.
  • Once the cookies are done, place them on a cooling rack and let them cool for 30mins or place them in the freezer for 20 mins.
  • Take about ⅓ cup of the ice cream and allow it to soften until almost completely melted.Turn the cookies upside down and lightly brush the bottoms with the ice cream. Allow it to soak some of the ice cream.
  • Scoop ice cream onto half of the cookies, then top with the other half, immediately freeze until the ice cream looks nice and firm again. Place in airtight container. To eat, wait about one minute for the cookie to soften slightly.
