- 1 lb chicken breast (can use frozen chicken or chicken thighs)
- 1 small onion – diced
- 1 jalapeno – diced
- 1/4 cup of your favorite salsa
- 1 cup vegetable broth
- 3 tbsp orange juice
- 2 tbsp – spice walla carne asada seasoning mix
- 3 cloves garlic – minced
- 2 tsp salt
- 1/3 cup cilantro – chopped
- fresh squeeze of lime
Instructions
- Turn the Instant pot on sauté mode, add some oil and let it heat up. Next add the onions, jalapeños and garlic.
- Next add the seasoning, orange juice, salsa and broth into the instant pot. Mix well to combine.
- Add the chicken breasts to the instant pot and coat well with the salsa and broth mixture.
- Close the instant pot lid and set it to “Pressure Cook” for 10 minutes.
- Once the 10 minutes is up, release the pressure manually and carefully remove the lid.
- Remove the chicken from the instant pot and shred it using two forks. The chicken should be very tender and easy to shred.
- You can use the shredded chicken in a variety of ways. It’s perfect for making Mexican rice bowls, tacos, or even adding it to a salad. The possibilities are endless!

- I used spice walls carne asada seasoning, you can find this at Walmart, Whole foods or online.
