Salsa Chicken

Ingredients

  • 1 lb chicken breast (can use frozen chicken or chicken thighs)
  • 1 small onion – diced
  • 1 jalapeno – diced
  • 1/4 cup of your favorite salsa
  • 1 cup vegetable broth
  • 3 tbsp orange juice
  • 2 tbsp – spice walla carne asada seasoning mix
  • 3 cloves garlic – minced
  • 2 tsp salt
  • 1/3 cup cilantro – chopped
  • fresh squeeze of lime

Instructions

  1. Turn the Instant pot on sauté mode, add some oil and let it heat up. Next add the onions, jalapeños and garlic. 
  2. Next add the seasoning, orange juice, salsa and broth into the instant pot. Mix well to combine.
  3. Add the chicken breasts to the instant pot and coat well with the salsa and broth mixture.
  4. Close the instant pot lid and set it to “Pressure Cook” for 10 minutes.
  5. Once the 10 minutes is up, release the pressure manually and carefully remove the lid.
  6. Remove the chicken from the instant pot and shred it using two forks. The chicken should be very tender and easy to shred.
  7. You can use the shredded chicken in a variety of ways. It’s perfect for making Mexican rice bowls, tacos, or even adding it to a salad. The possibilities are endless!

  • I used spice walls carne asada seasoning, you can find this at Walmart, Whole foods or online.
