Blueberry Scones with Vanilla glaze

Scones

  • 1 cup all purpose flour 
  • 1/2 cup heavy whipping cream 
  • 1/4 cup cold butter – grated or cut into small pieces 
  • 1/3 cup blubeberries 
  • 1/2 tbsp baking powder
  • 1/4 tsp salt 

Glaze 

  • 1/2 cup powdered sugar 
  • 2 tbsp milk 
  • 1/2 tbsp vanilla extract 

Instructions

  1. In a large bowl add the flour, baking powder and salt. Mix everything together and add in the butter. Using your hands combine and mix everything until the butter is incorporated into the flour and looks like wet set. 
  2. Next add in the heavy whipping cream and fold everything in, do no over mix, add the blueberries and fold them in.
  3. On some parchment paper, roll out the dough and use a glass or biscuit cutter and cut into triangles or rounds. Place on a baking sheet and bake at 400F for 15 mins.
  4. After the scones are done cooking, place them on a cooling rack and spread the glaze on. Enjoy!
