Biscoff S’mores Cookies

Ingredients

  • 1/2 cup crushed Biscoff Cookies
  • 2 tbsp sugar
  • 2 tbsp melted butter
  • 1& 1/2 cups all purpose flour
  • 1/2 cup melted butter
  • 1 cup sugar
  • 1/4 cup brown sugar
  • 1 egg
  • 2 tsp vanilla extract
  • 2 tbsp milk
  • 1 cup mini chocolate chips
  • 1520 marshmallows (regular size marshmallows should be cut down the middle.)

Instructions

  1. Preheat oven to 350F and line the baking sheet with parchment paper.
  2. In a small bowl, combine the crushed biscoff cookies and 2 tbsp melted butter and sugar.
  3. In a large bowl or stand mixer, combine butter, sugar and brown sugar. Mix until the mixture has a pale yellow color and is fluffy.
  4. Next add the egg, milk and vanilla extract. Mix on low speed for 2 mins.
  5. Next add the flour and mix on low speed until everything is well combined.
  6. Add the chocolate chips and fold them into the dough.
  7. Form small balls and roll them in the biscoff cookie crumbs, place them on the baking sheet for 10-13 mins (until the cookies are slightly puffed)
  8. Take the cookies out of the oven and place the marshmallow in the middle of the cookie, place pan back in the oven for 45 seconds until the marshmallows are all melted and brown.
  9. Take the cookies out, cool for 10 mins and enjoy!
