Creamy Tomato Bisque

Ingredients

  • 3 tbsp olive oil
  • 5 large tomatoes diced
  • 1 large onion diced
  • 3 carrots peeled and diced
  • 2 cloves garlic minced
  • 2 tbsp pesto
  • 2 tbsp Parmesan cheese
  • 3 cups veggie broth
  • ½ tbsp Italian seasoning

Instructions

  • In a large pot, heat up the oil over med heat. Add the garlic cloves, followed by the copped onions. Cook for 3-5 mins.
  • Next add the diced carrots, tomatoes and Italian seasoning. Add the veggie broth, followed by some salt and pepper to taste. Add the parmesan cheese and cover the pot with a lid and cook for 10 mins on med heat.
  • Transfer everything to a blender, and blend until everything is smooth. Transfer back into to the pot and add the pesto. Mix everything until it's well combined.
  • Simmer for 5 mins and serve with garlic bread or grilled cheese. Enjoy!
