In a large pot, heat up the oil over med heat. Add the garlic cloves, followed by the copped onions. Cook for 3-5 mins.
Next add the diced carrots, tomatoes and Italian seasoning. Add the veggie broth, followed by some salt and pepper to taste. Add the parmesan cheese and cover the pot with a lid and cook for 10 mins on med heat.
Transfer everything to a blender, and blend until everything is smooth. Transfer back into to the pot and add the pesto. Mix everything until it's well combined.
Simmer for 5 mins and serve with garlic bread or grilled cheese. Enjoy!
