French Onion Veggie Subs

Ingredients

French Onion Dip

  • 3 tbsp butter
  • 1 small onion diced
  • 1 tbsp brown sugar reg sugar is fine as well
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • salt and black pepper to taste
  • 1 tbsp soy sauce
  • 1 cup sour cream
  • ¼ cup mayo
  • ¼ cup chives finely chopped

Additional Sub Ingredients

  • 1 large sub roll
  • lettuce chopped
  • Tomatoes sliced
  • onions sliced
  • cucumbers sliced
  • sliced cheese of choice

Instructions

  • In a cast iron skillet over med high heat, add the butter and let it melt.
  • Next add the onions and cook for 5-7 mins on med/low heat until it starts to become translucent.
  • Next add all the seasoning and cook the mixture down for another 3-5 mins. Take it off the stove and let it cool down for a bit.
  • In a bowl mix the sour cream and mayo. Add the onion mixture followed by the chives. Mix everything together until it's well combined. You can serve as is or place in a airtight container in the fridge and serve it with some potato chips!

Assembling the Sub

  • Slice the sub roll down the middle, layer on the sliced cheese and toast for a couple mins or until the cheese has melted.
  • Next add a good layer of the French onion dip, followed by the veggies. Enjoy!

Notes

  • You can make this sandwich using any bread of choice, but I highly recommend you toast the bread.
  • I used Boar's Head caramelized onion, 3 pepper Colby jack and chipotle gouda cheese. I got them sliced at the deli in my Publix. 
  • Left over dip can be used to serve with potato chips, seriously is the best chips and dip because the dip can be served cold or room tempt.
