In a large plate, lay out your tomatoes on the edge of the plate, you can over lap them a little if you like. Next drizzle on the balsamic glaze and add salt and freshly ground black pepper.
In a mixing bowl, add in the arugula, truffle oil, freshly squeezed lemon juice and grate 1/4 cup of the Bellavitano merlot cheese or parmesan cheese. Lightly toss everything together and place in the middle of the plate along with the tomatoes.
Add the burrata on top of the arugula salad and add a little drizzle of truffle oil and salt and freshly ground black pepper. Serve with toasted baguette and enjoy!
Notes
I love to use green and orange tomatoes for this recipe, they are in season so you'll be seeing them a lot more at your local grocery stores. You can use any tomato of choice, but the fresher and more in season is obviously better.
I used traders joes burrata but you can any burrata of choice.
