Masala Burgers

These masala burgers have been my go-to for a quick weeknight meal to even weekend BBQ-ing. You can make a big batch of these and use them throughout the week in wraps or sandwiches. I kept the recipe really simple but you can definitely coat these in breadcrumbs for added extra crunch, feel free to use GF bread crumbs if want to opt for a healthier recipe.

Ingredients

  • 3 large Potatoes boiled
  • ¼ cup corn frozen or fresh
  • ¼ cup green beans chopped
  • ¼ cup green peas
  • ¼ cup carrots chopped
  • 2 cloves garlic minced
  • 1 green chili (jalapeño or Serrano) finely minced
  • ½ juice of lemon
  • 2 tsp salt or to taste
  • 2 tsp turmeric
  • 2 tsp red chili powder
  • 2 tsp ground coriander
  • 2 tsp ground cumin
  • 2 tsp garam masala

Additional Toppings for Burger

  • burger buns or sliders
  • lettuce chopped
  • Tomatoes sliced
  • onions sliced
  • pickles
  • pepper jack cheese
  • Condiments of choice

Instructions

  • In a bowl using a fork or potato masher, mash the potatoes, add all the spices and vegetables. Mix everything until it’s well combined. 
  • Form small burgers and place on a hot greased skillet, flip the burgers over after 2-3 mins, add some cheese and cover the pan with lid. Once cheese is melted, place the burgers on the bottom bun and add your toppings. Enjoy! 

Notes

  • For this recipe I used all Libbys Vegetables, it was so easy to use already cooked veggies vs frozen and having to wait them to thaw. Libbys Veggies are not only ready to use but also very fresh and still have a crunch!
