- Homemade pizza dough or store bought
- 1 cup broccoli – chopped
- 1 zucchini – chopped
- 1 bell pepper – sliced
- 1 small onion – sliced
- 2 cups spinach – finely chopped
- 2 tbsp oil
- 1 tbsp Italian seasoning * see notes
- 2 cups shredded cheese of choice
- 1 cup ricotta cheese
- 1/3 cup marinara sauce
Instructions
- Preheat oven to 380 F and line a baking sheet with parchment paper.
- Heat up oil in a skillet over med/high heat. Add the onions, peppers, zucchini and broccoli florets. Cook for 4-6 mins. Add the spinach and Italian seasoning. Stir until spinach is wilted. Let the mixture cool.
- Divide the dough in half. Roll out each half into a circle. Spoon a small amount of marinara sauce (about 2 tablespoons) onto the center of the dough, and add about ½ of the filling over the marinara, pressing gently to flatten it a bit.
- Sprinkle on some shredded cheese and add small dollops of ricotta cheese. Fold the dough over top of the filling to create a semi-circle shape, pressing to seal and crimping the edges with your fingers. Using a sharp knife add 2 slits on top of the calzones.
- Bake for 15-18 mins until it’s golden brown.
Notes
- The Italian seasoning I use is already salted and mixed of a combination of garlic, onion powder along with oregano and basil. If your Italian seasoning does not have those specific spices then feel free to add them into the veggie mix.
- I used my mom’s homemade pizza dough recipe, you can use store bought as well.
