Ingredients

- 2 packets of ramen
- 1 tbsp toasted sesame seed oil
- 1 small shallot – diced
- 2 stalks of scallions – white and green separated
- 2 cloves garlic
- 1 tsp ginger – grated
- 1 – 4oz Maesri Thai green curry paste
- 1 – 13oz full fat unsweetened coconut milk
- 1/4 cup veggie broth
- 2 tsp each: salt and brown sugar and soy sauce
Garnishes
- cilantro
- bean sprouts
- scallions
- chili oil
- chili crunch
Instructions
- Boil noodles accordingly to package instructions. Drain, rinse and set them aside.
- Into a pot heat up the toasted sesame seed oil and add in shallots and white parts of the scallions, sauté for 2 mins over med high heat.
- Next add in the minced garlic and ginger along with the whole can of green curry paste. Mix and cook everything for 2-4 mins.
- Add in the coconut milk, salt, sugar, soy sauce and veggie broth. Lower the heat and bring it to the simmer.
- Add in the cooked noodles and serve in a bowl and top it off with all the garnishes. Enjoy!
