- 1 packet of ramen or noodles of your choice
- 3 cloves garlic, minced
- 1 scallion stalk, chopped
- 2 tbsp red Thai curry paste
- 1 tbsp peanut butter
- 1 tbsp soy sauce or coconut aminos
- 1 (13 oz) can coconut milk
- 2 tbsp Momofuku chili oil (or any chili oil)
- 1 tsp salt and sugar
Instructions
- Cook the Noodles: Boil the noodles according to the package instructions. Once done, drain, rinse, and set aside.
- Make the Sauce: In a medium pan, heat a little oil over medium heat. Add the minced garlic and chopped scallions, cooking for about 2 minutes until fragrant.
- Combine Flavors: Stir in the red curry paste, peanut butter, soy sauce (or coconut aminos), and coconut milk. Mix until everything is well combined and the sauce is smooth.
- Assemble the Dish: Add your cooked noodles to a bowl and pour the delicious red curry sauce over them. Garnish with fresh cilantro, scallions, sesame seeds, and a drizzle of chili oil.
