Thai Coconut Curry Noodles

Ingredients

  • 1 packet of ramen or noodles of your choice
  • 3 cloves garlic, minced
  • 1 scallion stalk, chopped
  • 2 tbsp red Thai curry paste
  • 1 tbsp peanut butter
  • 1 tbsp soy sauce or coconut aminos
  • 1 (13 oz) can coconut milk
  • 2 tbsp Momofuku chili oil (or any chili oil)
  • 1 tsp salt and sugar

Instructions

  1. Cook the Noodles: Boil the noodles according to the package instructions. Once done, drain, rinse, and set aside.
  2. Make the Sauce: In a medium pan, heat a little oil over medium heat. Add the minced garlic and chopped scallions, cooking for about 2 minutes until fragrant.
  3. Combine Flavors: Stir in the red curry paste, peanut butter, soy sauce (or coconut aminos), and coconut milk. Mix until everything is well combined and the sauce is smooth.
  4. Assemble the Dish: Add your cooked noodles to a bowl and pour the delicious red curry sauce over them. Garnish with fresh cilantro, scallions, sesame seeds, and a drizzle of chili oil.
