Fiesta Potatoes
- 2 large potatoes- diced into bite size pieces
- 2 tbsp oil
- 2 tbsp butter
- 1 tsp cumin
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp oregano
- 1 tsp taco seasoning
- 1 tsp smokes paprika
- salt + pepper
Cheesy Sauce
- 1 tbsp butter
- 1 tsp smoked paprika
- 1 tsp taco seasoning
- 1 tsp cumin
- 10 slices yellow American cheese
- 1/3 cup milk
Additional garnishes
- Sour cream
- Pickled jalapeños
- Scallions
- Taco Bell hot sauce of choice
Instructions
- Preheat the air fryer to 400F for 10 mins, while you prep everything. Place the diced potatoes in a bowl, wash and drain them and drizzle a little bit of oil, salt & pepper. Add them to the air fryer and cook for 10-12 mins at 380F.
- In a saucepan, melt butter and add the seasonings for the cheese sauce. Cook the seasonings for 30 seconds and add in the milk. Lower the heat and add the slices of cheese. Stir everything until the cheese is fully melted and you have a nice velvety sauce. Turn the stove off and set aside.
- Next in a small saucepan, heat the butter and oil, and add all the seasonings for the fiesta potatoes. Cook on low heat for 2-3 mins.
- Once the potatoes are cooked, add them to a bowl and drizzle on the melted butter with all the seasonings. Toss and mix all the potatoes into the seasoned butter and transfer into a serving bowl or bowls.
- Next add the cheese sauce on top of the potatoes, reheat the cheese sauce if needed. Add some sour cream, jalapeños, scallions and Taco Bell hot sauce! Enjoy!
