Ingredients

- 1 large sweet potato
- 1 russet potato
- 1 onion
- 1 poblano pepper
- 3 tbsp oil
- 2 tbsp butter
- 1 tbsp chipotle seasoning or smoked paprika
- 1 tbsp onion powder
- 1 tbsp garlic powder
- 1 tbsp taco seasoning
- 1 tbsp oregano
- 1 tbsp ranch seasoning
- 1 tsp ground cumin
- 1 tsp Italian seasoning
- scallions or chives for garnish
Instructions
- Dice the potatoes and wash + drain them. Dice the onions and poblano pepper as well.
- In a skillet over med high heat, add the oil. Once the oil is hot add the diced onions, peppers and potatoes. Cook on med/high heat for 5-7 mins.
- In a small bowl, mix together all the spices and add 1-2 tbsp of the spice mix to the hash along with the butter. Cover the pan with a lid and cook on low heat for 7-10 mins or until potatoes are fully cooked.
- One the potatoes are cooked, serve on a plate grate some fresh parmesan cheese and add some scallions to top. Serve with my buffalo garlic ranch or ketchup. Enjoy!
