There’s nothing quite like a lazy Sunday morning spent indulging in a delicious brunch. And if you’re in the mood for something hearty and flavorful, look no further than this Sweet Potato Chipotle Hash recipe. Made with charred poblano peppers, onions, and a tantalizing blend of spices, this dish is sure to impress even the most discerning brunch aficionados.

To start, gather your ingredients. You’ll need some sweet potatoes, poblano peppers, onions, adobo chipotle sauce, onion powder, garlic powder, smoked paprika, taco seasoning, oregano, Parmesan cheese, and scallions.

Begin by peeling and dicing your sweet potatoes into bite-sized pieces. Toss them with some olive oil and seasonings.

In a large skillet, heat some more olive oil over medium-high heat. Add your diced onions and sauté for a few minutes until they begin to soften. Add your chopped poblano peppers and continue to sauté for another 2-3 minutes.

Next, add your adobo chipotle sauce, onion powder, garlic powder, smoked paprika, taco seasoning, and oregano to the skillet. Stir to combine, and then add your roasted sweet potatoes to the mixture. Stir gently to coat everything evenly with the spices.

This recipe is super easy and you can honestly use regular russet potato as well but I love incorporating sweet potato because its softer and goes so well with the spices, its kind of a mix of sweet and savory.

The seasoning is the key to this recipe, it may seem like a lot of spices but just remember you can use this spice mix in the future as well, I love to store mine in an airtight jar or a ziplock bag. The seasoning is a mixture of smokey paprika, onion + garlic powder but also some oregano, Italian seasoning and my current favorite seasoning.Trader Joe’s Ranch. I kept this seasoning blend salt free, so feel free to add salt after and adjust to your taste.

Sweet Potato Chipotle Hash

Ingredients

  • 1 large sweet potato
  • 1 russet potato 
  • 1 onion
  • 1 poblano pepper
  • 3 tbsp oil
  • 2 tbsp butter
  • 1 tbsp chipotle seasoning or smoked paprika
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1 tbsp taco seasoning
  • 1 tbsp oregano
  • 1 tbsp ranch seasoning
  • 1 tsp ground cumin
  • 1 tsp Italian seasoning
  • scallions or chives for garnish

Instructions

  1. Dice the potatoes and wash + drain them. Dice the onions and poblano pepper as well. 
  2. In a skillet over med high heat, add the oil. Once the oil is hot add the diced onions, peppers and potatoes. Cook on med/high heat for 5-7 mins. 
  3. In a small bowl, mix together all the spices and add 1-2 tbsp of the spice mix to the hash along with the butter. Cover the pan with a lid and cook on low heat for 7-10  mins or until potatoes are fully cooked. 
  4. One the potatoes are cooked, serve on a plate grate some fresh parmesan cheese and add some scallions to top. Serve with my buffalo garlic ranch or ketchup. Enjoy!
