Ingredients

- 2 ½ cups pasta of choice 2 ½ cups dry- measured when not cooked
- 3 tbsp butter
- salt and pepper to taste
- 1 small onion diced
- 3 tbsp all purpose flour
- 1&½ cup milk
- 2 tsp garlic and onion powder each
- 2 tsp smoked paprika
- 1 tsp ground oregano
- 2 tbsp buffalo sauce
- 1 cup Cabots spicy buffalo cheese shredded
- ½ cup pepper jack cheese shredded
- scallions for garnish thinly sliced
- toasted breadcrumbs for garnish
Instructions

Boil pasta accordingly to the directions on the package.

In a large sauce pan over med/high heat, melt the butter and add in the diced onions + salt and pepper. Cook for 3 mins until onions are translucent and add the flour. Mix and cook the flour for 2-3 mins until you no longer have raw flour.

Next add in the milk, all the seasonings and the buffalo sauce. Mix everything together and turn the heat to low.

Slowly add in your cheese and continue to mix. Once you achieve a nice cheesy melty sauce, add in the cooked pasta and and give everything a good stir.

Garnish with scallions and toasted bread crumbs if you like and enjoy!
Notes
- I used Cabot’s spicy buffalo cheese, but traders joes has their version as well.
- If you can not find any buffalo cheese, replace it with equal amounts of cheddar cheese and double the amount of buffalo sauce to the recipe.
- I used capatavi pasta for this recipe but feel free to use any pasta of choice.
