This Diwali, why not put a fun twist on traditional sweets with a fusion dessert that’s easy to whip up at home? Let me introduce you to Salted Caramel Burfi – a modern spin on a classic treat that blends rich, fudgy burfi with the decadent sweetness of salted caramel. Making burfi from scratch might sound intimidating, but it’s super simple when you break it down! All you need are a few basic ingredients: ghee, heavy whipping cream, and milk powder. Here’s how easy it is:

  2. Slowly add the milk powder, whisking continuously. This step is crucial because it prevents any lumps from forming – we want smooth, creamy goodness! Whisk, whisk, whisk!
  3. Add in sugar and a pinch of ground cardamom for that classic Indian flavor. And that’s it for the burfi! You’ll get this smooth, fudge-like mixture that melts in your mouth.

Now, let’s take it up a notch with Salted Caramel. It’s just three simple ingredients: sugar, butter, and heavy whipping cream.

Salted Caramel Burfi

Burfi

  • 1.5 tbsp ghee
  • 1 cup heavy whipping cream
  • 3 cups milk powder
  • 1/3 cup sugar
  • 1/2 tsp ground cardamom
  • greased 9x9 baking sheet

Salted Caramel

  • 1/2 cup sugar
  • 3 tbsp butter
  • 1/4 cup heavy whipping cream
  • 1 tsp flaky sea salt
  • 1 tsp vanilla extract or paste

Instructions

Burfi

  1. Into a sauce pan, melt the ghee and whisk in the heavy whipping cream on medium heat.
  2. Next add in the dry milk powder and whisk everything in until it’s well incorporated and you have zero lumps.
  3. Add in the sugar and ground cardamom and using a wooden or silicone spatula, mix everything together. Turn off heat and transfer burfi mixture into a 9×9 greased baking sheet. Grease it with ghee. Evenly flatten out the mixture into the baking tray and set in the fridge.

Salted Caramel

  1. In a sauce pan, melt the sugar on med high heat for 2-3 mins. Add in the butter and mix it in.
  2. Once everything is fully dissolved, turn the heat to low and add in the heavy whipping cream.
  3. Add vanilla extract and sea salt. mix until everything is well combined and drizzle it over the burfi.

Notes

  • If you really want to get fancy, melt some chocolate and throw it in a ziplock bag and snip a tiny hole in the corner, drizzle that chocolate over the salted caramel burfi!
  • I usually love to sprinkle on the sea salt once the salted caramel has harden a tiny bit, but this is totally optional and you can add it into the caramel beforehand.
