Pesto Calabrian Chili Mozzarella Panini: A Simple and Flavorful Homemade Delight

If you’re looking to elevate your sandwich game, look no further than the Pesto Calabrian Chili Mozzarella Panini. This panini is packed with bold flavors, fresh ingredients, and is incredibly easy to make at home, even without a panini maker. Perfect for lunch, dinner, or a quick snack, this panini will become a favorite in your household.

Step-by-Step Guide to Making the Perfect Panini:

  1. Spread the Flavors: Begin by generously spreading Calabrian chili paste on one slice of sourdough bread and pesto on the other slice. These spreads will provide a flavorful base and a delightful kick to your panini.
  2. Layering the Goodness: On the slice with Calabrian chili paste, layer with sliced mozzarella from the deli, followed by thin slices of red onions and tomatoes. Season the tomatoes with flaky sea salt and oregano for an extra burst of flavor.
  3. Add Fresh Ingredients: Next, add a layer of fresh mozzarella and a handful of arugula. The fresh mozzarella will melt beautifully, while the arugula adds a peppery bite.
  4. Finishing Touches: Grate some fresh pecorino cheese over the arugula and drizzle a good amount of balsamic glaze. These finishing touches will elevate the panini to gourmet status.
  5. Toast to Perfection: Close the sandwich with the other slice of bread, pesto side down. Heat a skillet over medium heat and add a pat of butter. Once the butter is melted and bubbling, place the sandwich in the skillet. Press down with a spatula or another heavy pan to ensure even toasting.
  6. Golden Brown Goodness: Cook until the bread is golden brown and crispy, and the cheese is melted, about 3-4 minutes per side. Be sure to check frequently to avoid burning.
  7. Serve and Enjoy: Once perfectly toasted, remove the panini from the skillet, slice it in half, and enjoy!
