My Mom’s Papdi No Lot

Ingredients

Papdi No lot

  • 4 cups water
  • 2 cups rice flour
  • 1 tsp carom seeds
  • 1 tbsp cumin seeds
  • Salt to taste
  • 56 green chilli paste according to your taste
  • 56 garlic cloves – grated
  • 2 tbsp oil
  • ½ papad kharo OR 1/2 tsp baking soda
  • Water for steaming
  • Cilantro for garnish

Green Chutney

  • 1 bunch cilantro
  • 2 serrano peppers roughly chopped
  • 1/2 tbsp garlic paste or 4 cloves garlic
  • 1 tsp salt
  • 1 tsp sugar
  • juice of half a lemon
  • 1/2 tsp ground cumin or cumin seeds
  • 12 ice cubes
 

Instructions

Papdi no lot

  1. Into a large pot add 4 cups water on med/high heat.
  2. Next add the cumin seeds, carom seeds, green chilli + garlic paste, salt, oil and papad khar. Mix well and bring to a boil.
  3. Add 2 cups of rice flour and stir well with wooden spatula or (velan). Stir continuously until the flour absorbs all the water.
  4. Grease your hand with oil and make small rounds, add them to the steamer basket or tray and steam for 20 minutes on medium flame.
  5. Serve papdi no lot (khichu) with peanut oil, chutney and achar masala. Enjoy!

Green Chutney

  1. Into a blender add all the ingredients listed under green chutney and blend until you have a smooth consistency. Serve with papdi no lot and enjoy!
