- 1 packet of ramen noodles
- 1 cup shitaki mushrooms – chopped
- 1 shallot finely chopped or 2 stalks of scallions
- 4 cups oceans halo miso ramen broth or broth of choice
- 1 tbsp white miso paste
- 2 tbsp soy sauce
- 1 tbsp hoisin sauce
- 1 tbsp sriracha sauce
- 2 tsp grated ginger
- 2 tsp grated garlic
- 1 tsp toasted sesame seed oil
- salt + pepper to taste
Garnishing
- scallions
- bean sprouts
- chili oil
- lime wedges
Instructions
- In a pot heat up some oil on med/high heat and add the shallots + mushrooms. Cook for 2-3 mins.
- Next add ginger garlic paste, miso paste and stir that into the veggies. Add the toasted sesame seed oil, soy sauce and hoisin sauce and sriracha.
- Add the broth and cover the pot with a lid and bring to a low simmer. Add the ramen and cook until ramen is cooked (4-6) mins.
- Once the noodles are cooked, ladle into a bowl and garnish with scallions, bean sprouts and chili oil! Squeeze that lime wedge and enjoy!
