This warm, comforting Spicy Miso Ramen is the quick and easy Asian dinner recipe that you need this winter. Made with your favorite ramen noodles, a hearty broth, and delicious miso paste, the whole thing comes together beautifully in just 30 minutes.

Ramen is one of those things that is hype up, like, a lot – and to be honest, I never understood it. Now before the chaos ensues, let me tell you that now, I do understand it. 

I went to California once and had this miso ramen that was out of this world. It was creamy, had a crunch from bean sprouts, heat from chili oil, and a broth and noodle combination that felt like heaven itself.

After eating that meal, I wanted to take the biggest nap ever, but in the most satisfying way possible. Not in the oh-my-god that was excessive way. Even when I recreated the recipe and made it at home, the most comforting, cozy food coma hit shortly after. 

Ramen is such an amazing meal because not only can you customize it and add your own twist on it in so many ways, but you can also whip it up super fast. For example, with this miso ramen, you can add any garnishes you like to the top, such as corn, a hard-boiled egg, sesame seeds, cilantro, and so much more.

And trust me, I know cup ramen or instant ramen can seem really appealing, but once you make this recipe, you’ll never go back to those quick fixes again because the fresh ingredients make all the difference in the world – and it’s still quick and easy!

This Spicy Miso Ramen is perfect for those cold nights when you don’t want to go out or even order out because it takes too long for the delivery to get there (not to mention the delivery fee, taxes, and tips…). 

The best part about this ramen recipe is the flavor that it gets from the miso paste. Miso is a traditional Japanese seasoning. It is typically found in a thick paste, produced by fermenting soybeans with salt, kōji, and sometimes rice, barley, seaweed, or other ingredients. Miso offers a unique, umami taste that offers depth to the savory spices. 

In this recipe, I used Miso Master White Miso Paste, which you can find at Whole Foods, Fresh Market, and even Publix. However, any miso paste from your local Asian supermarket should work just as well!

Why I Love this Spicy Miso Ramen

Soups and brothy dinners are a homerun in my opinion. You can easily scale them up or down to serve any number of guests, you can save them by freezing them, and they are always pretty healthy!

For this Spicy Miso Ramen, it’s no different. You can freeze the broth in Ziploc bags and plan ahead in single-servings. For instance, I usually make a double batch of it, let it cool, and freeze it in individual-size bags so it’s ready to heat up whenever!

In fact, I love this particular ramen recipe because the longer the broth sits, the better the flavor gets. I recommend making a batch of the broth and storing it in the fridge until you’re ready to eat. Then, all you have to do is bring the broth to a boil and add the noodles.

And lastly, this is a great go-to recipe for a big winter gathering. Whether it’s a party or a casual get-together, you can easily double or triple this recipe. Simply transfer the broth into a crockpot or Instant Pot and use the “keep warm” function.

I usually cook the noodles and place them in a bowl alongside a large tray of garnishes. Your guest can then serve themselves and pour the hot broth over their noodles, add their preferred garnishes, and enjoy without you having to worry about serving everyone individually.

Overall, this rich, warming, umami-flavored Spicy Miso Ramen is a fantastic and easy dinner option, no matter the occasion.

Spicy Miso Ramen

Ingredients

Scale
  • 1 packet of ramen noodles
  • 1 cup shitaki mushrooms – chopped
  • 1 shallot finely chopped or 2 stalks of scallions
  • 4 cups oceans halo miso ramen broth or broth of choice
  • 1 tbsp white miso paste
  • 2 tbsp soy sauce
  • 1 tbsp hoisin sauce
  • 1 tbsp sriracha sauce 
  • 2 tsp grated ginger
  • 2 tsp grated garlic
  • 1 tsp toasted sesame seed oil
  • salt + pepper to taste

Garnishing

  • scallions
  • bean sprouts
  • chili oil
  • lime wedges

Instructions

  1. In a pot heat up some oil on med/high heat and add the shallots + mushrooms. Cook for 2-3 mins.
  2. Next add ginger garlic paste, miso paste and stir that into the veggies. Add the toasted sesame seed oil, soy sauce and hoisin sauce and sriracha.
  3. Add the broth and cover the pot with a lid and bring to a low simmer. Add the ramen and cook until ramen is cooked (4-6) mins.
  4. Once the noodles are cooked, ladle into a bowl and garnish with scallions, bean sprouts and chili oil! Squeeze that lime wedge and enjoy!
