- 2 tbsp butter
- 2 tbsp oil
- 1 onion – chopped
- 2 cups freshly chopped spinach
- 12–14oz canned artichoke hearts – finely chopped
- 1/4 cup chopped pickled jalapeños
- 1/2 tbsp grated garlic
- 2 tsp taco seasoning
- 1 tsp smoked paprika
- salt + pepper to taste
- 8 oz cream cheese
- 1/4 cup sour cream
- 1/4 cup mayonnaise
- 1/4 cup parmesan cheese
- 1 cup Mexican blend cheese
- 1 cup Panko bread crumbs
Instructions
- In a skillet, heat up the oil and butter on med/high heat. Add the onions and cook for 2-3 mins. Next add the spinach, artichoke hearts and the seasonings. (Garlic, taco seasoning, smoked paprika, salt + pepper)
- Turn the heat off and mix in the cream cheese, sour cream, mayo, parmesan cheese and pickled jalapeños.
- After everything is mixed transfer into a baking dish and add cheese to the top along with the breadcrumbs, bake at 350F for 15-20 mins until cheese is nice and melted and bubbly. Enjoy!
