- 1 Packet of Ben’s Original Spanish Style Rice
- 1 jalapeño – diced
- 1 small onion – diced
- small cubes of pepperjack cheese
- 1 egg
- 1/4 cup flour
- 1/2 cup breadcrumbs
- Seasoning for flour and breadcrumbs 1 tsp each: salt, pepper, garlic + onion powder + oregano, smoked paprika.
Garlic chipotle sauce
- 1/4 cup sour cream
- 2 tsp of chipotle adobe
- 1 tsp garlic powder and salt.
Instructions
- Microwave Ben’s Spanish style rice for 90 seconds, transfer into a bowl and cool for 10 mins.
- Sauté jalapeño and onion on med heat for 5-7 mins. Combine with the rice and mix everything together.
- Create the breading station, add seasonings to flour and breadcrumb mixture and whisk egg.
- Divide rice into 6 equal portions and form patties and place 1-2 small pieces of pepperjack cheese in the middle, roll the rice patties into a ball.
- Roll the arancini into flour, egg and then breadcrumb mixture.
- Fry until golden brown and enjoy!
