Mexican Arancini Balls

Ingredients

Scale
  • 1 Packet of Ben’s Original Spanish Style Rice 
  • 1 jalapeño – diced 
  • 1 small onion – diced 
  • small cubes of pepperjack cheese
  • 1 egg
  • 1/4 cup flour 
  • 1/2 cup breadcrumbs 
  • Seasoning for flour and breadcrumbs 1 tsp each: salt, pepper, garlic + onion powder + oregano, smoked paprika.

Garlic chipotle sauce

  •  1/4 cup sour cream
  • 2 tsp of chipotle adobe  
  • 1 tsp garlic powder and salt. 

Instructions

  1. Microwave Ben’s Spanish style rice for 90 seconds, transfer into a bowl and cool for 10 mins. 
  2. Sauté jalapeño and onion on med heat for 5-7 mins. Combine with the rice and mix everything together. 
  3. Create the breading station, add seasonings to flour and breadcrumb mixture and whisk egg. 
  4. Divide rice into 6 equal portions and form patties and place 1-2 small pieces of pepperjack cheese in the middle, roll the rice patties into a ball.
  5. Roll the arancini into flour, egg and then breadcrumb mixture. 
  6. Fry until golden brown and enjoy!
