- 2 bags of success boil in bag Basmati rice
- 2 tbsp oil
- 1 tsp cumin seeds
- 2 dried red chiles
- 1 bay leaf
- 1 small red onion – sliced
- 1 potato – sliced
- 2 carrots – sliced
- 1 bell pepper – sliced
- 1/4 cup frozen peas
- 3 tsp each: turmeric, cayenne pepper, ground cumin, ground coriander and salt
- 2 cloves grated garlic
- 1/4 cup – finely chopped cilantro
Instructions
- Boil the rice accordingly to package instructions.
- Into a large pot add oil and heat on medium high heat. Proceed to add the cumin seeds, bay leaf and dried red chiles. Cook for 30 seconds until fragrant.
- Add all the sliced veggies and cook for 2-3 mins and cover with a lid and lower the heat to medium.
- Add the spices along with garlic and give everything one good mix before adding in the rice.
- Once you add in the rice, mix everything together, garnish with cilantro and enjoy!
