Huevos Rancheros Breakfast Sandwich

Ingredients

Scale
  • 2 english muffins
  • ¼ cup refried beans
  • 2 slices cheese
  • guacamole
  • salsa of choice
  • 2 tsp taco seasoning

Addtional toppings

  • pico de gallo
  • queso
  • cilantro
  • jalapenos

Instructions

  1. Fry or scramble the eggs as desired, season with taco seasoning.
  2. Slice the english muffins in half and toast them, next spread the refried beans and add cheese.
  3. Next add the eggs, guacamole and salsa or any other toppings of choice. Place the top half of the english muffin and serve! Enjoy!

Notes

  • You can use refried or black beans of choice, from the can or home made.
  • I make the queso day before or you can use store bought.
