Fajita Seasoning
- 1 tbsp Ancho chile powder
- 3 tsp smoked paprika + 3 tsp adobo seasoning
- 2 tsp onion + garlic powder + ground cumin + Mexican oregano
Fajita Mix
- 1 lb chicken breast or thighs – cut into strips
- 1 bell peppers of choice – sliced
- 1 large onion – sliced
Cilantro Lime Rice
- 1 cup rice
- 2 cups broth
- 1/4 cup cilantro – finely chopped
- juice of 1/2 lime
Additional Add on’s/Garnish
- Avocado
- Salsa
- Sourcream
- Shredded cheese
- black or pinto beans
- Iceberg lettuce
- Fresh or Pickled jalapeños
Instructions
- Into a large bowl, combine chicken and veggies along with all the spices. Mix until everything is fully covered in the seasoning and add it into an air fryer basket.
- Air fry at 380F for 10 mins or until chicken is fully cooked. Stove top: Add onto a hot cast iron skillet and cook for 5-7 mins.
- Into a small pot, add rinsed rice and broth, bring to a boil and lower heat and cover with a lid. Cook rice for 17 min. Once the rice if cooked add lime juice and cilantro and fluff with fork.
- Serve everything into a bowl, top it off with your favorite garnishes and enjoy!
