Ever since I went to Miami I’ve been craving black bean soup so badly!! After two failed attempts I finally made it good enough to the point where I ate this 4 days in a row. It’s spicy, creamy and topped with an avocado salsa that definitely gives the soup a lot more texture, but feel free to omit the salsa and just sprinkle on some cheese or a dollop of sour cream.

Black Bean Soup

  • 3 tbsp olive oil
  • ½ onion finely chopped
  • ½ bell pepper diced
  • 6 large cloves of garlic minced
  • 1 serrano diced
  • 1 chipotle pepper in adobe sauce
  • ½ tsp cumin seeds
  • 1 tsp oregano
  • 1 bay leaf
  • ½ tsp smoked paprika
  • 1 tsp salt
  • 1 cup dried black beans
  • 4 cups vegetable broth

Avocado Salsa

  • 12 Avocados diced
  • ½ onion finely chopped
  • 1 tsp lemon juice
  • salt and pepper to taste
  • 1 tomato diced
  • ¼ cup cilantro finely chopped
  • 1 clove of garlic grated
  • 1 jalapeno finely chopped

Instructions

Black Bean Soup

  1. Heat the oil on the saute setting in your instant pot. When warm, add the onions, bell peppers, serrano, garlic, and bay leaf. Saute for 5 minutes or until the veggie soften and the onions are translucent.
  2. Next add the black beans, veggie broth stock, chipotle pepper and all the seaonings . Cover instant pot with lid, make sure the vent is sealed. Cook on manual high pressure for 40 minutes. Once the timer goes off, allow a natural pressure release for 10 minutes. Then do a quick release to let out any remaining pressure. Remove the bay leaf and using a immersion blender, blend the soup if you want a smoother consistency, and serve with avocado salsa, enjoy!

Avocado Salsa

  1. Mix everything in a bowl, set aside until ready to use.

Notes

  • I definitely suggest using dry beans. That way, you don’t have to soak the beans, you can directly go from dry beans to finished soup in less then an hour!
  • You can blend the whole soup after its been cooked or blend half of it, depending if you want a smoother or chunky style soup.
  • The canned adobe can be found at any grocery store in the international section. If you can’t find it or don’t have it on hand, just add extra amount of smoked paprika.
  • You can skip the dry beans and use canned beans as well and make this on the stove top as well. Replace 1 cup dried beans with 2 cups of canned black beans.
