Crispy Cheesy Chipotle Patties

Ingredients

  • 12 cups left over mashed potato
  • 1/4 cup scallions – finely chopped
  • 1/2 cup cheddar cheese
  • 1 tbsp chipotle adobe sauce
  • 1/4 cup left over creamed corn * optional
  • 1/4 cup all purpose flour
  • Butter and oil for shallow frying

Instructions

  1. In a bowl mix the scallions, cheese, adobe sauce and creamed corn together along with the mashed potatoes. Next add in the flour and mix until everything is well combined.
  2. Form small patties, repeat until you no longer have any potato mixture left.
  3. In a skillet, heat up some oil and butter and place the potato patties onto the skillet and cook on med/high heat for 2-3 mins on each side until golden brown. Serve with sour cream, ranch or any sauce of choice.
