Ingredients

- 1–2 cups left over mashed potato
- 1/4 cup scallions – finely chopped
- 1/2 cup cheddar cheese
- 1 tbsp chipotle adobe sauce
- 1/4 cup left over creamed corn * optional
- 1/4 cup all purpose flour
- Butter and oil for shallow frying
Instructions
- In a bowl mix the scallions, cheese, adobe sauce and creamed corn together along with the mashed potatoes. Next add in the flour and mix until everything is well combined.
- Form small patties, repeat until you no longer have any potato mixture left.
- In a skillet, heat up some oil and butter and place the potato patties onto the skillet and cook on med/high heat for 2-3 mins on each side until golden brown. Serve with sour cream, ranch or any sauce of choice.
