These Brownie Crinkle Cookies are the easiest way to make classic brownies without headache or hassle. Forget about sifting ingredients or mixing carefully. Have fun with this super simple recipe that combines the best of two classics for a delicious sweet treat you’ll be dreaming about tomorrow.


Controversial opinion: brownies are the single best dessert of all time. Considering I make a lot of dessert recipes, you have to know that means a lot coming from me. There is almost nothing that would ever make me say no to a brownie.

It’s sweet, soft, and goes perfectly with ice cream. You can make it chewy, you can make it cakey, you can make it dense and fudgy – and it’s all delicious. 

However, brownies can seem daunting to make. Almost every recipe will tell you that if you don’t sift correctly or melt correctly or mix correctly, you’ll mess it up. (Which, by the way, don’t take it so seriously! A brownie is still a brownie no matter how it comes out.)

Even I sometimes just crave the crinkly texture of a perfectly made fudge brownie, but don’t want to bother with having to make a whole batch.

That’s why I came up with this Brownie Crinkle Cookies recipe. It’s a much easier, and more approachable way to make brownies without all the hassle.

Plus. you get to combine the best of both worlds with a classic brownie and classic cookie recipe. So, if you wanted to fight me when I said that brownies are the all-time best, maybe we can compromise and say these brownie crinkle cookies are the all-time best instead.

With a tough cookie exterior and a soft brownie interior, my Brownie Crinkle Cookies are absolutely incredible to have warm with some ice cream or with a glass of your favorite milk. 

How to Make the Perfect Brownie Crinkle Cookies

Rather than sifting ingredients or worrying about over-mixing, you can take a much more simple approach to this brownie recipe. 


Like with cookies, you are going to start by melting the butter and chocolate and incorporating cocoa powder into it. Then, you’ll mix the wet ingredients with the dry ingredients and add in the melted chocolate mixture.

And then you bake!

With only a few ingredients and steps, this recipe comes together so quickly. So, the key to making it right is just to get creative with it and make it your own.

If you are feeling in an extra chocolatey mood, you can drizzle some Nutella on top of the cookies once they’re out of the oven. Something I like to do during the holiday season is cover half the cookie in melted white chocolate and sprinkle some crushed peppermint also known as candy canes. If you’re to lazy to do all that you can simply melt the white chocolate bars in a microwave safe bowl and add it to a ziplock bag, cut a small hole in the corner and just drizzle the white chocolate over the cookies, than sprinkle the crushed candy canes! I reason why I prefer white chocolate bars rather than chocolate chips is because chocolate chips burn very easily in the microwave and just harder to work with. This is the best mess free solution!

Now, of course, if you’re a brownie enthusiast like me, I’ll let you in on a little secret. You can actually use this exact recipe as a classic brownie recipe if you really want! If you add some chocolate chips, I promise, it will taste way better than anything you could find at the store.

  • If you’re not eating these in one sitting, they can be stored in an airtight container at room temperature for up to five days!
  • If you’re looking for an eggless option, substitute the 3 eggs in my recipe for ⅓ cup of yogurt. Full-fat or Greek yogurt works best.

Crinkle Brownie Cookies

Ingredients

Scale
  • 1 cup sugar
  • 3 eggs
  • 1 tbsp oil
  • 2 tsp vanilla extract
  • 1/4 cup melted butter
  • 1/4 cup cocoa powder
  • 1 cup chocolate chips
  • 3/4 cup all purpose flour

Instructions

  1. Preheat oven to 350F and line baking sheet with parchment paper.
  2. In a stand mixer or using using a handheld mixer, beat sugar and eggs until you have a light pale color.
  3. Next add the oil, vanilla extract, mix into the batter.
  4. In a sauce pan, heat up the 1/4 cup butter and add the chocolate chips. Stir until chocolate is nice and melted, turn off the heat and add the coco powder.
  5. Add the melted chocolate mixture into the egg mixture and combine.
  6. Add the flour and mix until everything is well combined.
  7. Add 1 tbsp drops of the cookie dough batter onto the parchment paper and bake for 8-12 mins.
